I'm so lost here, there's so many ideas and I have no clue what to do. I'm a newbie at baking and learing about all the decorating tips and ideas. I want to make a icecream cake for my sons bday but have no clue where to begin. I saw that some used angel food cake but how can u make that fit into a regular 13X9 pan or could u make your own angel food cake? If so what's a good recipe? Also I was wondering if there was a really good cool whip icing instead of buttercream. Any help would be tremendously appreciated since I'm so out of my element here. Thanks

I'd ditch the angel food....

and go for a dark luscious chocolate cake!

bake the sheet and FREEZE it.

torte it (cut in half so it makes two layers) -- use a large cookie sheet dusted in PS -powdered sugar - to remove the top layer.

cut a rectangular carton of ice cream into about 1in or so slices and lay on bottom cake layer

then back on w/ top and back into freezer.

while refreezing, make the icing (which I'll leave for others to supply)

then when good and solid again -- on goes the icing.

back to freezer

out for final decos.

back to freezer until about 15--20 min before time to serve so it softens just enough to be easy to cut.

(of course -- I also think two layers of brownies would be good too --- or brownies on the bottom and blondies (think giant size tollhouse cookie soft and chewy) on the top would be great too)

I made an Ice Cream Cake last summer and I used Chocolate cake and Brownies. Brownies for the bottom layer and chocolate cake for the top! It was so good. I made it similar to the way Doug suggested.. Wilton makes a good whipped icing. It comes in a box and you whip it with ice water. I don't have a good personal recipe..

Since it sounds as though you don't feel confident in the kitchen, this might be a great solution for you. No baking involved! If you can semi-melt ice cream, than you can make this!

It's a "recipe" I received from a family friend. No "cake" (gasp!) involved, but you could change that if you really wanted to... (although I love it the way it is).

1½ boxes of oreo cookie crumbs with about 1 cup melted butter. You can mix in some instant coffee if you want to make a mocha ice cream cake and give the crust a little extra flavour. Press into a spring form pan and freeze for about a half hour, during which time I tak the ice cream (whatever flavour tickles your fancy) out of the freezer to soften. After that time has elapsed, remove cookie crust from freezer, mould softened ice cream into the spring form pan, and the put back in the freezer overnight.

In the morning, remove the cake from the spring form in preparation for the decorations which do not include icing (gasp!). Just make chocolate curls by melting dark and white chocolate and pour it on a flat surface. Once it's "dry" you can curl the chocolate by scraping with a flat scraper (I use a putty knife).

Top the cake with the chocolate curls and drizzle dark fudge sundae topping down the sides of the cake.

Easy as sin (and tastes just as naughty!)

Hope someone tries this - it is to die for!

Maureen1971 has the right idea. I use to do something like that for my DS#2 when he was little.

I would use Orea cookies that I would zap in the processor until they were just crumbled then I would press them into the bottom of a springform pan that I lined with parchment paper.

I'd add a little softened ice cream on top of that and spread it around to cover the cookies then I add some chocolate syrup.....crushed malted milk balls, M&M's, Peppermint Patties, Reeses Peanut Butter Cups, etc.....what ever you want. I'd just layer everything in there and top it off with some crushed cookies and more....yes more toppings! I'd freeze it for a good day and then take it out about a half hour before I want to freeze it. Unlatch the side and the ice cream cake easily comes off the parchement onto a serving plate. The kids loved it and everyone always wanted to know where I bought it......LOL!!

I make a killer whipped cream icing icon_smile.gif You need 2 cups of heavy whipping cream, a package of clear gelatin, and 1/4 c of superfine sugar. Take a package of clear gelatin and dissolve it in about 3/4 c of whipping cream. Take the remaining 1 1/4 c whipping cream and whip it till soft peaks form, add 1/4 c of sugar SLOWLY, then add the remaining whipping cream and vanilla or flavoring if you wish, and whip it till the sugar is dissolved and the cream is stiff. Also, make sure your bowl and beaters are SUPER cold before starting. I always put mine in the freezer before I start making it. The only problem with this icing is that it needs to stay cold and it's not real good for decorating. It tastes like heaven though, so if you can use buttercream for decorating and keep the cake in the fridge till you serve it, this stuff is perfect. Of course, with an ice cream cake, you can just freeze the whole thing.

for the whipped icing, you could try mine. If you go to the recipe section here, do a search for "whipped icing" and mine is the one made with corn starch. I like it better than the ones with flour because you don't have that flour taste...It's more like a whipped cream taste but more stable than whipped cream, of course. It's great for piping flowers too, even roses.
