What are some good books on candy making? ones with recipes and pictures and maybe some explanations of what's going on.
I just bought one called, "Chocolates & Confections - formula, theory, and technique for the artisan confectioner" by Peter P. Grewling, CMB, The Culinary Institute of America. It's a textbook, but it covers almost every kind of candy you can think of and then some. It has lots of pictures and an enormous amount of recipes. It does go over a lot of the science of confections, but that's why I bought it, I really like science. It has a lot of sidebars that troubleshoot things and gives examples of how to fix them or tells you that you have to start over. It's 388 pages long and the copyright is 2007. This is the first candy book I've purchased, I wish I could help more, but this post will bump yours up.
Candy Making for Dummies --not many pictures but helps explain alot of things. (I love the "Dummy" Books)
The Ultimate Candy Book has NO pictures whatsoever. I must have pictures! LOL
If you go to Amazon.com and search for "candy making books" there is usually alot of feedback from other people that have purchased each book.
I have started getting some of my recipes from Food Network.
I think you can do just as well searching the net for info.
I totally agree with candyladyhelen unless you just want to add to your "library" (like me )
There is sooooooo much information on candy making on the internet and forums are a great place to get help.
