I have a cake to do next month for a bridal shower and I am looking for a recipe for a good rasberry filling. Any suggestions? I am the Matron of Honor in the wedding and the wedding cake is going to have rasberry filling (they're in NY and I'm in MD). I was looking for something other than the ready to use you get at the cake store.

I don't know if you are familiar with the Cake Lady recipes but I have her Raspberry Buttercream filling recipe. If you are interested in that I can e-mail it to you! BTW...I was wondering where you've been I hadn't seen you post lately!!

Yup, I did do a raspberry filling...it was this one...

I used frozen raspberries, and the filling by itself is a little tart, but since you layer it between buttercream it's not so bad. Also, I put a thin layer of buttercream on the top of the cake, made my dam, then placed the filling in, and then just placed the next layer of cake on top of that. Now, since I did not make a stiff enough dam, my filling squeezed out icon_cry.gificon_cry.gif but I made it work. The cakes that I made are posted. Click on the photos button on the bottom of my post and I believe it is the one called "Heather's Bridal Shower Cake"
I am the maid of honor as well for Heather, and her party was a complete surprise for her. The wedding is this Saturday (04/30/2005) icon_eek.gif and I am also making the flowers for the wedding (the bouquets, boutannaires, and corsages...)

I'd love the recipe! can you PM it to me or e-mail? I've been here. I've just been very busy at work and not able to hang on the web as much as i'd like to! I check in every chance I get!

icon_lol.gif fond memories..... I had the party at my house and was expecting possibly 40 or more people. (I hate it when people don't rsvp either way) The night before I was up really late trying to make icing and getting last minute stuff for the party... that morning I was getting the house ready, still had to make a corsage for the Heather, and decorate the cakes. The cakes had been in the frig all day long the day before and all night, and when I pulled them out they were still frozen, probably because there were soo many stacked on top of each other. So I had to wait for them to defrost a little bit, so while I waited I covered the cake boards..I was able to frost the heart shaped cake ok, but the 10 " chocolate cake had a bunch of crumbs in the icing, and by the time I was icing the 10" I realized I did not have enough icing icon_cry.gif nor did I have time to make more icon_cry.gif So then I start on the big 14" cake, put that together, then I start to ice the whole cake and because of the pressure that I am putting on the cake, the dam that I did not apparently make very well squeezes right out of the cake along with all the filling icon_cry.gificon_cry.gificon_cry.gif So I doctored up the cake and made the cakes look somewhat the same. Took a shower (at like 1:30PM and shower started at 2:30PM icon_surprised.gif ), then finished assembling the cake, which I was going to stack, but I did not want to take anymore chances, finish the corsage, and finish putting the rest of the flowers on the cake.
Meantime...the mother of the groom, who came over to help kept asking me how to do this, and how should I set up that......she's not a doer she likes being told what to do..thank goodness the sister-in-law of the groom was there and was an independent thinker..
But most of all, I have to sincerely thank from the bottom of my heart, my mother- she was THE biggest help for the shower. She came into my house and helped with my cleaning while I was at work (I worked full time Monday-Friday at the time). THANK YOU MOM!!!!
Everything went fine after that, people couldn't tell I messed up the cake, and I received compliments on the whole thing even a week after the event.
There's more I think, I have a post about it in the Cake Disasters area, and I do have the cake posted, as mentioned before...
So like I said, I hope things go well for you... I would recommend taking the day off before the event to make things easier, I know I wish I had...oh well lesson learned

Wow! I'm glad everything worked out for you in spite of your problems.
I hope everything goes smooth for me over the next couple months. I have at least one cake per weekend through mid June. Most weekends I have 2 or more. I'm trying to get details from everyone so I can get all of my boxes and cakeboards ahead of time and start planning things out! I think i'm going to have to turn a couple down in June. I have a tiered anniversery cake and a one year birthday cake (don't know the details on that one yet but knowing them it won't be an easy cake) and now I have a request for a graduation and two more birthday cakes all in one weekend. And I work a full time job M-F! We'll see! Wish me luck!

Hi, mouse. Is it possible to make this recipe now-about 10 days before the event? I want to use for hubby's cake for the weekend of the 7th of May. I will be working on the cake next week. But if I can get anything out of the way early, I will. If I can make it now, do you recommend storing in the fridge and then letting it come to room temp just prior to filling the cake? Thanks for any help here.

You probably could do that, but I would recomend freezing it just in case. I think the filling would be fine. I would probably let is sit in the fridge the day before decorating to let it start to defrost, and then put it on the counter to warm up. You might need to stir it, but I think it would be fine.
