Does anyone have a lemon cake recipe that is willing to share from the Cake Bix Doctor Book?

I make one using a white cake mix. Not from the book you mentioned though. But it is really yummy! It can be made with lemons or oranges.

1 white cake mix
1 white chocolate pudding mix
4 egg whites
1/2 C fresh squeezed lemon juice
1/2 C milk
1/2 C butter
1/2 tsp almond extract
zest of 2 lemons

Mix all together and bake according to package directions.

This is really yummy if you add lemon juice as your liquid to your buttercream frosting to put on it. I even add zest to my buttercream if it is going to be covered by fondant or just used as a filling.

I usually use DH mix, everything listed on the back, an extra egg and a packaged of pudding mix.

I've also seen where you can add fresh lemon juice or lemon zest to help boost the flavor.

Oh man I just realized that I left out a key ingredient! A white chocoalte pudding mix! I will go back and edit now!

Here is the recipe from the cake mix doctor. Try it first, i find it to be way too sweet and Yellow!!! I am going to try the other one that was posted on this thread.

Lemon Cake

1 package yellow cake mix
1 pack of lemon gelatin
2/3 c. veg oil
2/3 c. hot H2O
4 lg. eggs

Mix all. bake in 350 or whatever you bake at.

I made this one for my brothers birthday. He loved it.
Lemon lime Cake
1 pkg of lemon cake mix
1 pkg of vanilla pudding
4 eggs
3/4 cups of oil
1 can of lemon lime soda

Mix all the ingridents and then bake at 350

I actually used a box of lemon pudding instead of vanilla. When I made it I forgot to add the oil, but it still came out good.

I personally don't like the ones that are made with lemon cake mix. I think they tsate like fake lemon. I really like using the white cake mix and adding lemon juice and zest. I think you get a nice airy lemony fresh taste this way and it pairs really good with buttercream made with lemon juice.

I made the one that Cakesbakes1 made and it is good. I also put the glaze with the lemon juice and zest.

I just posted this recipe recently but I can't remember where I found it, the origianl recipe called for poppyseeds but I thinkthose are yucky (can't stand those little buggers cracking in my teeth).
Here it is:

*Lemon Buttermilk Cake *
1 box white cake mix
1 pkg. (3.4) vanilla instant pudding
1 cup low-fat lemon yogurt
1/2 cup veggie oil
1/2 cup buttermilk
4 large eggs
2-3 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest

Mix all together as directed on box. Batter will be thick. Bake as directed or until pick comes out clean.

Oh so moist and oh so lemony and oh so YUMMY!!

You know I was watching Sandra Lee on her semi homemade cooking show and she made a strawberry cake from a cake mix and used strawberry juice. I am going to try that next time.
