Royal Icing Help!!!

How ahead of time can you make royal icing flowers when your icing contains real egg whites? Assuming of course that you store them in the fridge. I have a cake that I am making for Saturday...and it calls for about 75 royal icing apple blossoms, and I want to know when I can start making them. Thanks All! icon_razz.gif

You can't store royal icing items in the fridge. The moisture in your fridge will break them down. They need the dry air to solidify gradually.


I say start them today if you need to. Does anyone really eat these anyway?? icon_confused.gificon_confused.gif

Considering it's raw egg whites, they won't be any "less" dangerous as the week progresses! More dangerous? Probably not really.

I always tell my customers that children, nursing/pregant women shouldn't really eat raw egg products anyway.

Look for pastuerized eggs. Also, add some lemon juice. Bacteria can't grow in an acidic environment.

You can make them a good ways in advance. Add a drop or two of acetic acid or if you don't have that a drop or two of white vinegar.In addition to creating an acidic envi. it makes the flowers dry quicker and rock hard as well. In any case and I don't know how true it is.... maybe someone can clarify for me.... I've heard that it's really raw egg yolkproducts that you have to be wary of. That the whites are pretty safe.
