Using a chocolate cake mix, add an additional egg and a small box of instant chocolate pudding to make it more dense and moist. Instead of the water, add the same amount of cooled strong brewed coffee. Super easy and quite yummy!

Get the Italian instant coffee granules. I like Medaglia D'Oro. Use it for a mousse cake.

The Chocolate Layer Cake recipe posted here at Cake Central by Tripletmom has coffee in it and tastes wonderful!! It's pretty dense, too. I would guess that it would work fine for what you're needing. icon_smile.gif
