I usually only bake enough to just use one rack in the center of the oven. I need to bake a lot of cupcakes and can fit 5 pans on one rack. Where do I position the other rack so that I can bake on that one too? Will they bake successfully doing it this way?

Also. cupcakes need to be delivered for a Sat. event, (250 of them) I am baking and freezing in advance, and using raspberry filling from the sleeve and mixing it with buttercream dream; how soon can I fill them and do they need to be refrigerated? I want to make sure that they are fresh and moist the day of the event. If I fill and ice on Fri. pack them in boxes will they be okay staying out overnight? TIA

Just make sure you have enough room on both side of the pans to let the air circulate; otherwise, your bottom will burn before your tops are cooked.

I read somewhere to make sure there is approx 2 to 3 inches between the pans for air circulation

As long as your icing does not contain dairy product (beside butter) they should be fine sitting out overnight.

I typically bake using both oven racks. They are each in the center of half of the oven - 1 in the center of the top half, 1 in the center of the bottom half. To make sure everything bakes evenly, half-way through the cooking time, I switch the stuff on the bottom rack to the top and vise versa, I also rotate the pans 180 degrees when I do the rack switch. I've never had a problem with uneven baking/browning or burning since I started doing this! icon_smile.gif

I do the same thing - no problems.

For the 1st time last night I used both racks and also moved the pans 1/2 way through. They all baked just fine. I had 5 cakes at once and they were even all different sizes.

I will do that from now on. It's a big time saver.
