The No Fail recipe came from Kitchengifts.com...here is a recipe they have for chocolate rolled cookies, I think I remember Antonia saying this is the recipe she uses.

I saw this awhile back when it was mentioned and wanted to use it but I don't have coffee, I don't drink it....is there a substitute? 2 Tbs is a lot to just omit, I think.....

I don't drink coffee either, I actually replace 2 T of coffee with 2 tsp of vanilla instead.

antonia...if you change the coffee, how do yours come out so dark? I would love to make the chocolate but hesitate too because of the coffee

Bbelias, what if you can't find Dutch process?

Anotnia, another non-coffee drinker! We are in the minority. Do you like tea? I will replace with vanilla, thank you both.

Terrific, thank you! Just bought a new container of Hershey's last week. Will be tackling these over the next few days, when I have time. Cake_Princess has her A-Game so this means my cookies will be D+ icon_lol.gif

if you don't drink coffee (and as such, don't have it handy) but want to add it to the recipe get a small jar of the freeze dried esspresso (usually in the italian specialty section of a large grocery store)

it tastes MUCH better than the regular freeze dried coffees (in the opinion of a coffee junkie *grin*) and can be mixed as necessary

Yes, Zamode....I'm a tea or Coke Addict!!

I drink about 4 cups of black tea a day IF I'm not piping cookies (makes my hand unsteady!) Caffeine NUT! icon_lol.gif

Oh, and I buy a very very dark cocoa from a local health food store. It's Dutch for sure.

You have the most steady hands ever. Never even a dent or dip in any of your cookies. I need to find dutch cocoa too. I need to find a health food store here in my town.

I don't have much around me but I do have a health food store, maybe I can look in there. My SIL has her own restaurant and goes to the shows at the Javitz Center in NY. She invited me along but wound up not being able to go. Point of my blabber being was that I planned on getting some good chocolate there. I wanted to experiment with chocolate but wound up putting the Wilton melts back, I've heard they aren't that good and I couldn't do it, chocoholic that I am.

Everyone in my family loves tea! Isn't it grand! Cold and hot, year round. I hope my daughter will like it someday. Do you have those big "bucket mugs", we call them, Antonia? Dainty cups are pretty but they don't serve the purpose....you need one of those big 12-16 ounce buggers! thumbs_up.gif

try to find a heavily alkalized dutch-processed cocoa, the more alkali the cocoa contains, the darker it gets, but also more bitter.

check out the "black onyx" cocoa on this site:
http://www.savoryspiceshop.com/spices/cocoa.html

and this site claims that their jet-black cocoa is what makes oreo cookies so black:
