I make ice cream cakes. Client asked for a "chocolate cake with mocha cream cheese icing". It's for a baby shower, so they know "that's what mom likes". What suggestions do you have for an ice cream cake? First of all, I need to come up with a mocha cream cheese (just add espresso powder to my cream cheese icing???). Secondly, what kind of ice cream would go well with mocha cream cheese icing??? I've never had that icing before. I guess I can go with vanilla, but I'd rather find something else.
thanks!!
Pam

Hi Pam,
Wow! What fun! I know that Breyers has a fantastic coffee ice cream!!! And another one I love is Edy's Espresso Chocolate. (I think that's what it's called.)
For your cream cheese, personally I would add a little chocolate and some espresso powder.
That sounds delish!!! Hope it turns out great!
