Hi, all!

I am working on designs for a wedding cake (30+ table cakes, actually!), and want to incorporate chocolate shells. I have the molds I need, the chocolate is easily attainable, but I am wondering how well the candies will hold up.

The wedding will be outdoors, later afternoon/early evening, but at the end of July in West Michigan...it can be very hot and humid (we are right by Lake Michigan, and the venue is on a river leading into the lake). I would like to use the shells as decoration for the cakes, and the bride is also interested in using them as favors.

Has anyone used them in hot/humid weather? Do I have to worry about them melting, or do they hold their shape well? I have only used molded chocolates for indoor celebrations.

Any chance she'd go for wrappers? If they are wrapped, and they start to melt, at least there won't be a mess. You'd hate to see chocolate all over table cloths, clothes, etc. Would that work?

if the chocolates and the cake is kept out of the direct sunlight you should be okay. But i would make sure that the favors are wrapped cause there is always that chance of them melting.

She was planning on wrapping the chocolate shells in netting and placing them in little tin buckets as individual favors...the reception area will be covered by tents which will help with the sun, but that won't keep the heat out. Thank you for your suggestions...I will have to see what she says!
