How Do I Make Chocolate Mmf?

I can add some cocoa powder to it? will that work? I have to make a cake this evening for DH's birthday and I am at work and don't have time to run out and get brown food coloring.. icon_sad.gif

that's what I would do haven't tried it myself, but I imagine with the addition of the cocoa powder you'r e goonna want to add a little more water as well, because you're still gonna need all the sugar to make it sweet.........then again I guess if you didn't want it that sweet, you should be able to mix in all your cocoa powder and then continue with the powdered sugar until it's the right consistency!!

I've only made chocolate MMF once, but maybe my experience will help. The recipe I found for chocolate MMF said to add 1oz of chocoloate and 1 TBLS of cocoa powder (for a full recipe, 16 oz each of MM & PS). I did that but, it did not taste very chocolatey to me. So I ended up adding 3oz of bittersweet chocoloate and 3 TBLS of cocoa powder. With the extra chocolate it tasted like a Tootsie Roll. The problem is the MMF was hard to work with and crack easily (I've never had problems with MMF except this batch of chocolate).

I assume the additional melted chocolate made it to stiff. There are a couple of things I think might fix the problem. Maybe adding a touch of shortening. Or only using 1 oz chocolate and more cocoa powder. And possibly changing the type of cocoa powder. I've got some natural cocoa (rather than Dutched processed) because it has a stronger flavor, but have had a chance to make chocolate MMF yet.

You might try a littel cocoa powder for color and add choc. extract.
