large swirl --- 1M (or Ateco brand #826)

bathing cap/grass --- Ateco brand #233

I did. I used the IMBC recipe I always use...but they will also have their own recipes for the cupcakes/icing in the magazine too.

The room was REALLY cold though, so my icing is a bit stiff on camera! icon_rolleyes.gif Usually it's about the consistency of stiff whipped cream.

How do you get your cupcakes so perfect? My cupcakes always come out slightly browned on the bottom. I don't think they are overcooked, based on the interior and the top. I can just see that golden brown on the bottom through the cupcake liner and I think they would be so much prettier without it. I use a dark nonstick pan and I think that might be the problem. Do you use standard liners? Your cupcakes look so smart and elegant and mine seem so frumpy and tired. I'm referring to just the cupcake....never mind the decorating....it's fabulous in it's own right.

Can you tell that I am completely awestruck by your work? I want to be just like you when I grow up! icon_smile.gif

Okay, firstly I have to let you know that these are done with cake mix for photography etc. Having to bake dozens and dozens of them over and over again in the tiny kitchen right on set at the studio meant that we had to use a mix for speed, convenience, price, etc. (I'm NOT harping on cake mixes here, just being honest about these not being our scratch recipe version....although they look pretty similar!)

If your cupcakes are browning on the bottom, I'd definitely recommend using the regular aluminum muffin tins....not the dark pans. General rule is the darker the pan, the lower the baking temperature should be....which can and does usually result in a darker baked good.

Use an ice-cream scoop (about 1/3 cup capacity) to evenly portion the batter between the liners. That will give you cupcakes of the exact same size and proportion.

I bake my cupcakes in the top portion of the oven (not convection, only still oven) at 310-325 degrees maximum.

We bake our cupcakes in special paper liners that are 25% taller & the paper is twice as thick as the jumbo-sized ones you can get at the grocery store. (Sorry, I don't have a brand-name or a website for these...I just pick them up in big 500-count bulk packages at a local warehouse supplier for restaurants.)

I figured the cupcakes in the video were your ultimate best in terms of appearance, but I've been admiring your perfect cupcakes for ages. icon_smile.gif Thanks for the tips about the liners. The taller and thicker liner certainly make a nicer presentation than the grocery store liners! I guess some aluminum muffin pans are next on my wish list--that list grows every time I visit CC. icon_lol.gif
