Hello....I really do need your help. Has anyone used the Duncan Hines Red Velvet box cake mix? If so, what did you add into the mix to make it yours? I used the recipe from the Choc. Cake Lady Mix? However, I am sure it just doesn't do it for me. I really don't have time to make it from scratch....PPPPPLLLLEEEAAAASSSEEE HHHEEELLLLPPPPPP!

Thanks Kim

in another post leily said she uses a complimentary pudding mix and an extra egg to all her box mix cakes. Don't know how that would work but you might want to try it.

I haven't tried this yet, but I've heard good things about it.

When I make a red velvet cake I use the cake mix extender and it is wonderful, taste like scratch and gives you more batter, I don't think you would be disappointed at allicon_smile.gif

1 cup plain flour
1 cup sugar
1/4 teaspoon salt
1 egg
1 teaspoon vanilla
1 cup sour cream

Mix as directed on back of box and then add rest of ingredients and mix until well blended.

I agree with irisinbloom I use the extender recipe with every cake mix, with Red Velvet I also add one tablespoon of herseys cocoa. I just did one of these for my sister in laws birthday, I torted it and filled with vanilla pudding and whipped bettercream, it was soooo good. Good luck.

Iris and Deijha,

Hello and thanks for replying. Ok, now I have a question about the extender. Do you know how much extra the extender adds? What is it about the extender that makes it taste different? With the R/V have you all ever added pudding to the above mix or used buttermilk instead of water? Thanks again for your help. I have a R/V 1/2 sheet cake coming up. Now normally I use 3 boxes, if I use the extender how many boxes would I have to use to have enough batter......You all are the best....thanks again Kim

Kim I have never added buttermilk, pudding, or water in the above recipe I gave you, but maybe someone else has. For 1/2 sheet you could proably get by with 2 box mixes using the cake mix extender. I'm not sure what makes it taste different but it is really sooooo good, let us know how it turns outicon_smile.gif

Irisinbloom, When you say plain flour, do you mean all purpose?

Dordee,

Yes, plain flour is all purpose. Hope that helps.
I think you will like the extender in your cake mixes. I use the extender all the time and it really does make a big difference. I have people tell me they think it is homemade.

Cindy, so is this extender recipe that you gave us above always the same for all mixes? That's a great idea for getting just a little more out of your batters; might have to try that.

(And if you do 2 red velvet cakes, are you saying use 1 recipe of extender or double it?

Thanks.

Yep you use the extender recipe for each box mix and the extender can be used for any flavor box mixicon_smile.gif
