Cascade Of Roses Help

i will be making a croquembouche of at least 180 puffs. instead of the toffee it will be stuck together with chocolate. i will be making chocolate candy clay roses to be cascading down.

HERES THE HARD PART: how do i attach the roses? do i just put a dob of chocolate and stick each rose on, or do i wire them together in a long bunch then wrap it around?

for those who have used candy clay before, the roses will be varing in size probably up to the size of half a tennis ball, just to give you all an idea of how much they will weigh.

if i attach them with chocolate, will they be too heavy and fall off?
if i wire them, how do i secure it to the croquembouche?

I would test the chocolate to attach. Get a can of air duster (like you use on computers) It is cold and will quick set the chocolate. Be sure to use the straw attached to control where the air goes.

If that did not work well, try royal icing. I would go to wire as a last resort. It is my policy to avoid all nonedible items on food as possible.

yeah i wanted to avoid wire as well, as i never mentioned wire to the customer, i guess i will make a practise one and see how strong it sticks with chocolate first.

I don't see why you couldn't simply use toothpicks?????/ I would actually make the rose on the toothpick allow them to harden up then stick them in, then when people actually pull a rose off they will know the toothpick is there and have something to hang on to while they eat the rose, I'm sure most people at a party won't shove the entire rose into their mouth all at once (like I do when I have one that isn't quite right) Lol

i made a small batch of profiteroles and a couple roses, then i put a dob of melted chocolate on the base of the rose and stuck it on the profiterole and let it dry. then i shook the hell out of it. to my suprise, it never fell off!!! i done some more shaking, and it still didnt fall off. so im going with chocolate. thanks for yall help.
