Need a scratch recipe for carrot cake that is diabetic related for a special request for a birthday.

She wants cream cheese icing on it also diabetic related.

My mom also is a diabetic, so lately I have searched the internet and found these recipes. I actually made one last weekend, it was ok for me.... but my mom loved it, said it was one of the best she'd ever had..
