Question About Cookie Bouquet Timeline.....

If I am planning on doing cookie bouquets, how far in advance can you make these? Can you make the dough in advance and freeze it? If so, how long in advance can I freeze the dough without it getting funky? icon_lol.gif

I try and make the bouquets about 3 days prior to delivery, one week max. I use a sugar cookie dough with royal icing base and accents. From what I have read, if you plan on doing a rolled fondant background, you cannot freeze them. Also, I just dont feel right charging someone for a cookie bouquet that was previously frozen. I have certainly frozen other cookies before, and plan on doing so for my wedding, just not the decorated sugar cookies that are used in the bouquets. Hope that helps! Thanks for the advice...I guess I was wondering if I could premake several batches of cookie dough and freeze those - not the cookies themselves. I also do not like freezing pre-baked stuff. I am afraid it will taste like the gunk from the supermarket bakeries icon_lol.gif .
