I am making a cake right now for my Grandma and it has Dede Wilsons IMBC on it. I know you are supposed to serve IMBC at room temp (or it will taste just like butter).

Since dinner will not be until around 5 or 6, is it okay to leave out covered from now until then?

Thanks!

I got this quote from a chef named Jacques Torres who is selling a book on Amazon:

I like to make an Italian meringue because the heat of the sugar kills any bacteria in the eggs.

So, IMO since it's out only a few short hours, it should be fine! Make sure to post pictures!! icon_smile.gif

I've left mine out for longer than that with no problems. Just don't leave it anywhere warm or your decorations will wilt. You can also refrigerate (somewhere with no strong odors) and take it out an hour before serving.

And here is a pic of the cake. We have not taken roses yet in class so they are just from reading the book, so they are not that good. And it looks like I was drunk when I did the writing LOL
