HAS ANYONE EVER HEARD OF BETTERCREAM FROM RICHS? IT'S SOLD
ON THE SUGARCRAFT WEBSITE. I NEED TO FIND A NOT SO
SWEET WHITE ICING FOR MY WEDDING CAKE.

Hi! I use Richs Bettercream every day where I work as a grocery store cake decorator and it is really good. It is a light fluffy icing just like the cool whip you would buy in the tubs out of the freezer section except it is a thicker creamer cool whip. If you have a Sams nearby they sell their bucket of bettercream for like $22.00 just tell the cake decorator you want to buy a bucket. The only thing working with this icing is if the sits at room temperature to long while you are decorating and it gets warm the icing will get really "airy" (not sure how to describe it) and it will be hard to work with. If you notice it getting like that put it back in your fridge or freezer for a couple of hours.

This is one I use a lot. Not at all sweet.I got it from another site but it is posted here too. I do mine all in one bowl BUT do the part with the water and meringue FIRST get it good and stiff. Then add the crisco and powder sugar. Just let the mixer do its job. This is great used as filling too. It does not however crust. I dusted a paper towel with cornstarch to snooth and it worked great.
For my light icing I use Whip and Ice. It puts Rich's to shame in tatse and Rich's leaves a weird aftertaste. And I can pipe and make roses with it. It also comes in a sugar free which the taste is unbelievable.
Well, I sort of luck out here. It is sold commercial only and I have family that works there so I get to purchase it to use. It is unbelievable stuff and will hold in heat up to 105 degrees. I am using it for a June weding outside with no worries. The best part is it does not need refridgerated and can sit out for 5 to 6 days. It is a non dairy mix. It colors well and takes any flavor. I have even done some string work with it. Everyone I make a cake for raves over it. Wish I had better news.
Ugh!!! All positive things about it but not where to get it?!?! Thats not fair!!!

when you say sold commercially, do they order it from a grocery company (sysco, or something like that??) or is it a specialty confection company. i work in a restaurant in addition to decorating in my spare time (or my not so spare time...like all night long after working all day) and we can order stuff off of the truck when it will be running. is "whip and ice" the brand name if i were to ask the salesman??
The company is Instant Whip. They sell in Ohio, Philadelphia and Arizona. It is their own product and they specialize as you mentioned in dairy toppings and icing. I live by the corporate office and one of the warehouses. The issues are it has to be bought in gallon sizes and by the cases if not flats. They currently only sell to restaurants and bakeries.

yes I did use it on MOST of the cakes I posted. not on the burger cake. All the wedding ones. It realy is great icing. I even used it on the deer. A lady at church is an "icing" person. you know she will ask for the extra flowers for her slice ect.... Well she liked it better than the regular buttercream. no fridge needed and holds up well in the heat.
A woman in my Wilton class works at a Sam's bakery and uses their icing in class. It looks just like the Whipped Cream BC listed here. She practices making rose with it b/c that's what they do at work but our instructor says it's not stiff enough to do the Wilton roses.
