I have just had an order for a red boxing glove cake for a birthday on the 11 April, problem is I am going on holiday on the 8th! She (my sister-in-law) said she really wants the cake, so if I make it before I go, can she freeze it. I said I think it will be fine, but wanted to check with you guys! It will be a chocolate cake, filled and covered with IMBC and then red fondant. If I put the finished cake in a box and wrap the box well with plastic wrap, will the cake be OK? I'm a bit worried about condensation on the red fondant and also don't know far in advance to tell her to take it out of the freezer.

The IMBC may seperate if it is frozen, I may be wrong but hopefully someone will come along that knows for sure.
I wouldn't freeze it. The icing might crack when it starts thawing out. I've made cakes as early as 3 days ahead and as long as you don't cut into them, they are fine. I don't know about any longer. If you did, Just try and make sure your cake is really moist to begin with. Sorry I can't be of further help to you. good luck!!

No experience here...but=) I read on here that quite a few members have successfully froze a fondant covered cake. I have also read that Satin Ice says it can be frozen. The biggest thing I remember reading is that when it is defrosting, it might get condensation on it...don't touch it. Some recommend putting a fan in front of it to dry the condensation. I am sure some experts will help you out though=) Jen

I never tried freezing an iced cake. I think the fondant would crack.
ive had no complaints about cakes that I've refrigerated,that are covered in fondant. I've always done it.I usually have them in the fridge overnight.
I made one fondant covered chocolate cake on the 23rd dec,and it was in their fridge until the 26th dec...I was told it was beautiful and moist. All I did was tell them to take it out of the fridge for about an hour or so to get the chill off. (depends on the weather)
I also tell them to take the wrap off it so it will dry.
I only make cakes for family and friends tho

I have never frozen a fondant covered cake, and I wouldn't recommend it, but I have refrigerated fondant cakes with perishable fillings and they have been fine. However, I have frozen fondant after I've made it, wrapped it tightly in plastic wrap and placed it in a baggie. When I take it out and let it defrost in the fridge for overnight/a day it's perfect.
I would make it ahead and keep it in a cool dry place. I believe this is why fondant became so popular... because it could be used to cover a cake keeping it fresh and sealed for a couple days allowing for extensive time consuming decorations.

I froze the top of my wedding cake which was fondant covered. I wrapped it really well in plastic wrap and foil before I put it in the freezer (I wanted to make sure it would be ok for a year! I put the cake in the fridge a day or two before our anniversary to defrost. I admit I didn't closely inspect the cake before we ate it, but for what it's worth, I don't remember any problems with the cake.
