I just put the first of 2 11 x 15 cakes I'm making into the oven. I just realized that I forgot to add my vanilla and almond extracts. This is being made with a doctored cake mix recipe. Do you think it will be ok without the extra flavorings??? Of course it is not going to be almond flavor now.

What I did was 2 cake mixes, 2 cups flour, 2 cups sugar, milk, sour cream, egg whites, salt....There was batter left over and it tastes ok, but wondering how it is going to be once it bakes up. Any suggestions or opinions????

I've read similiar posts about forgetting vanilla. I recall the consensus was..it would be ok.

I rarely add extracts when doctoring a cake. They will taste just fine.

Thanks ladies. This is for a new customer. I guess maybe I'm tired. I really wanted it to be the almond cake, but oh well, it's going to be plain white. Now I'll have to leave it out of the other one too. May go ahead and add the vanilla though.

Thanks again,
Cindy

If you want it almond, you can try and make a almond simple syrup and let the cake soak it up. It might not be exactly the same ,but it will still have a nice taste of almond. icon_smile.gif
