i am about to have a wedding cake order which will be my first. the girl is getting married in june so i have time. she is wanting a 3 tier cake to serve 150 people. what size cakes should i use and tell her that would be good to use assuming she will keep the top cake? i have looked at some serving charts but really cant make heads or tails from it. also if she is wanting me to do a grooms cake do i still charge by the slice for it or just what i would normally charge for that size cake? any help is appreciated.
You never mentioned if your client chose the round tiers or not.
This is the breakdown from the Wilton chart, round pans, 4 inch tiers, 2-2 inch layers each:
The 8 inch round offers 24 servings.
The 10 inch round offers 38 servings.
The 12 inch round offers 56 servings.
The 14 inch round offers 78 servings.
The 16 inch round offers 100 servings.
The 18 inch round offers 148 servings.
If I am off by 1 or 2, it's because my eyes fuzzed up while trying to count the little squares!
What design did your client choose? I am having a hard time envisioning this. I could see 4 tiers with the complimentary 6 inch tier on top, but not 2 with the comp. It seems as though it will be mighty wide at the bottom.

I got my chart from some e-books "cake decorating made easy" But I quess it would depend on how large you slice the servings. Good luck with your cake.
A 16'',10'',6'' 2 layer 2'' round cakes would serve 150 people. That would include them keeping the top tier. The size of cake would be 1'' by 2''. The grooms cake depends on what she wanted but I would charge more than just a basic cake.

Since this is your first wedding cake...I would not do anything too difficult. Don't stress yourself out. I would do a 14, 10, and 6 inch stacked cake. In addition...I would do a 12x18 sheet cake to be cut in the kitchen. This should be plenty of cake to cover all of your servings. I would charge at least 2.25 per slice.
Is the groom's cake a difficult design??? If it is...I would charge by the slice. If not...you could charge what you normally charge. You will have to use your judgement.

thank you all for all your advice. i knew i could count on everyone. i havent talked to the lady yet myself but got word from a friend that ask me if i did wedding cakes. she does have my number and is supposed to call me so maybe i will get all the details worked out soon. i was just needing to know what i should tell her about the size of cakes and everything. again thank you.
First, find out her budget. My first order is for
220 people. I talked her into a fake dummie
on the bottom and middle and top real cake.
4 sheet cakes filled. It saves me time when I
use the dummies and saves them money.
No one knows except her and me.
