What do you do for a "cookie tray"

One of the ladies I work with asked me if I do cookie trays - I guess like you would buy at a bakery or store. My question is, what type of cookies would you put on a cookie tray, and how do you go about pricing that? She is not interested in real fancy cookies like Italian cookie tray, so I guess she might want from sugar to chocolate chip.......any ideas gang?

I make cookie trays for my family at christmas. I always get carried away and make too many varieties . But my standards are, russian tea cakes, chocolate chip, peanut butter kisses, sugar cookies, white choc. macadamia nut, fruit cake cookies. I have sooo many cookie books and recipes, I try new ones each year. I don't know about the pricing, because like I said I make them for my family as gifts.

Thank you Subaru for the suggestion. icon_biggrin.gif I never thought of doing what I do for the holidays also. I will take you up on your offer for a recipe - the fruit cake one sounds interesting! Still wondering what to price out at; guess I will have to cost out each cookie type as if I was doing the large decorated sugar cookies.

I do cookie trays all the time, especially for graduation parties. They are also gifts, so I cannot help on pricing. I usually try and determine who will be eating the cookies (if it's all women, I'll go with fancier cookies, and if children will be there I may put rice krispy treat on it). I do at least 1/2 regular cookies and then up to half the tray bar cookies. I usually pur brownies on, because who doesn't love brownies? I also make all the cookies quite small, so that people can sample more than one and not look like an idiot doing it. I personally like Raspberry Shortbread Bars and Lemon Tea Cookies, but I often put on sugar cookies, chocolate chip, and oatmeal raisin. I typically do between 6 - 8 kinds of cookies.

When I do cookie trays for Christmas, I usually put the old favorites...decorated sugar cookies, mexican wedding cakes, brownies and stuff like that. But then I also like to make a couple of new ones on there too. If they look good in the picture then I'll make them.
I also like to put in chocolate covered pretzels and peppermint bark.
