Good morning decorators, just wondering has anyone ever pre-cut a sheet cake and then frosted it. Seems like I have heard of that before but have never tryed it, to me you would just be asking for trouble with crumbs. Thanks irisinbloom

I've never tried that before. I was tempted once but was afraid problems may arise. I normally use a cake tester to make sure my cake is done so I won't have to slit or cut a small section of the cake.

I've wondered that myself, actually had a customer ask me if I would do that, cut it and then ice it...I declined....my thought was that besides the crumbs, that it wouldn't stay together very well after being cut. I used to do that for office parties but I took the cake in the pan and only iced and decorated the top.

Before I learned to use fondant I made a cake for a baby shower w/ blocks on it that were cut cake. Crumbs were a problem! I was making a cake from a mix so it was not very dense and I did not have it slightly frozen when frosting (both tips that I have learned on here). I did use a crumb coat of icing (really thin coat first and let dry) but I still seemed to have a few crumbs. I guess if I did it again I would have covered them w/ fondant, or I would have made a denser cake. Hope my trial and error experience helps

I mostly cut out my designs before I ice them.
Never had any problems with that.

This is something myself I was wondering about...I wonder if this would work...since you usually see precut cakes on single layer sheet cakes only...
1) Position your uniced cake onto the cake board.
2) Take unflavored dental floss or fishing line and cut the cake this way, brush off any crumbs.
3) Place cake in freezer to slightly freeze up.
4) Remove from freezer and then crumb coat the cake.
5) Then ice and decorate cake as normal.
Does this sound good to everyone else? I know I plan on trying this when I can.

Will do, but I won't be able to test this theory until next week Monday or Tuesday, weekend is jammed full of stuff to do this weekend. Plus I am helping my best friend with the final details for her wedding on APril 30th, that I am the maid of honor for.
