When you're pricing a grooms/wedding cake, are you supposed to go by the number of "wedding cake" sized serving when you price per serving or are you supposed to charge by "party servings" (which are larger)? I saw a reference to "party sized servings" on the Wilton website and now I'm confused.
I personnally thing the wedding cake chart servings are too small. Unless you have a perfectly baked cake, a very sharp knife and a skilled server, you can't get that many servings. I use the party serving chart, and even take off a few. If it says serves 50, I only count 45 or so. It never pays to run out of cake.
However, the bride something has a preference about how much cake they really want. Also, if there is going to be a lot of food, they will likely eat less cake-but not always. If there is more than one flavor, guests will often want some of both.
That's kind of what I thought Joann. How do you know how many servings of cake to count as a "party serving"? I've never seen this reference to serving size before today so I'm a little unsure as to how to use it. Where do I find a copy of the party serving chart?
the wilton yearbooks list both serving sizes in the back....i'm not sure if it's on their site or not
OK...here's a link
http://www.wilton.com/cake/cakeprep/baking/times/party_2inch.cfm
if that doesn't work, go to www.wilton.com and type in "servings" in their search box....it will come up with the different serving charts
