Can I go ahead and do a BCT for Sunday and leave it frozen in the freezer or do you not recommend I do that.I have 3 cakes due for Sunday so I wanted to get a jump on them.

I say go for it, just make sure it is well covered so that it does not get freezer burn and accumalate any smells that might be in your freezer.

I agree. Doing your bct ahead of time is a great time saver. And if you properly wrap them before freezing, they can stay for awhile.
