How Long Can Cakes Stay Out?

Hi! I am new to this board, and am learning a lot of things from here. I am baking three tiers for a very special occassion, and was planning to cover them with MMF. Since I'm new to cake decorating, I expect this to take a while icon_lol.gif. Can I leave the fondant covered tiers outside for long, while I cover the other tiers? I would think that sticking the cakes in the fridge would cause unpleasant condensation -or can it be done?? All help is appreciated. icon_smile.gif

it depends what you are using for your icing and whether or not it needs to be refridgerated. You want to try not to stick cake in the fridge because it dries the cakes out. If you use MMF and a regualr buttercream icing then 3 to 5 days the cake will sit out. At that point it is probably stale and ready to pitch.
