Hi, does anyone have a good recipe for a dense sheet cake that will keep for a bit under a week?
I'll be making a cake for my final cake class. I'm still working on the dimensions, but basically it'll be quite a high, round cake, made up of layers, with a filling in between the layers. The whole cake will be then covered in Fondant and decorated in my class. I need to make the cake and have it covered for the 18th April, so it would need to be made around the 15th, and still be edible for a few days after it's decorated.
I've never really done cakes like this, so any advice would be helpful.
I was thinking about using a torte recipe.

White cake (boxed mix) with the Cake Extender added will work well:

I have tested it a few times left out of the fridge and it's always good for a week thumbs_up.gif
