Modeling chocolate covered in MMF

Okay, I've decided that for my nephew's baptism cake next week I am going to replicate the centerpieces.
I've also decided that I am going to use modeling chocolate to sculpt the hands and then cover them in MMF.
I haven't done too much in either and much less them combined. My question is this, how far in advance than I make this? Should I make the hands this weekend and then cover them in MMF when I do the rest of the cake? Or can I do the whole thing this week?

Thanks again to EVERYONE for their advice!!! Ya'll are great!!!

Oh, and attached is a photo of the centerpieces to refresh everyone's memory.

I think you can do them now. keep an eye on the fondant once it is on the hands.

Just in case: If it seems to be drying/cracking, smooth them with a bit of shortening and keep them in something airtight.
