Hello,
I was hoping someone out there had a great recipe for carrot cake. I know I want pineapple, coconut, pecans, and raisins (golden) in it just not sure what box mix to use and what to add. Please help! Also any suggestions on frosting to use?

Betty Crocker makes a carrot cake mix, and on the box it has a recipe where you add pineapple, nuts, coconut and rasins. I think you can also find it at the Betty Crocker web-site. I made it for my brother and it was very good! Just don't try to level it with the cake leveler with the nuts in! It was trying to tear apart! I think a knife would work better to level this one, I learned.

I just looked at bettycrocker.com and they call it "Ultimate Carrot Cake". I think you can kind of play with it...I used double nuts instead of rasins because my SIL doesn't like rasins. I used the "crusting cream cheese" icing recipe from here, and it was really good too!
