Paddle for cake mix and icings, whisk for whip cream and puddings. Work in a bakery thats what we always use. I also have a KA.

I always use my whisk for my buttercream. I put my KA on #8 and set a bell for two minutes. It comes out great!

S=Just so you know why.... you use a paddle for BC and not the whisk because you don't want air bubbles. Also, you do not want to over mix either you can still get bubbles by overmixing

I also use a paddle for cookies. I say to mix as per instructions.
But I have a recipe that I LOVE it calls for butter flavored shortening.
I cream mine until the yellow turns a whitish yellow color.
I do not over mix in when I incorporate the flour

I've never had air bubbles in my frosting. I'm happy with the texture using the wisk.

As for cookies, I use the paddle up until I add the flour, then I switch to the dough hook!
