Normaly I sugest IMBC, but I'm not sure how well it would work under MMF. Some people don't use anything under fondant, just a apricot jam glase, but I don't know if that would work with MMF because it shows any bumps, plus people like icing. Some people add a little lemon juice to regular BC to cut down on the sweetness. Some people say to add a pinch of salt or use salted butter, but salt just intensefies flavors, so I don't think that works. Still, if you are using unsalted butter, maybe try adding a little salt and see if you like that better. If you're already using salted butter, try using unsalted. HTH

I find that the pinch of salt makes a big difference! icon_smile.gif

I'm loving the Whipped Cream Buttercream from the recipe section. There is no whipped cream in it...dunno why it's named that way. Anyway, it's much less sweet and is more stable than other "fluffy" icings.

The last cake I covered in MMF came out pretty smooth by my estimation and I just glazed the cake with light cron syrup. It's the happy birthday cake with the gumpaste flowers in my gallery if you want to have a look and judge for yourself.
