Help Please

I need help if any can help me with my proublem you can email me at [email protected]

here is my proublem i make a wedding cake with applesauce instead of oil and i was baking the 12" and it broke right in have what do i need to do to fix my proublem i bake the cake at 350 degrees and for 40 to 50 minutes. please help me i have a wedding next weekend and i need this cake for. icon_biggrin.gif

Hmmmmm---well, first I would say to lower your temp to 325, use a flower nail as a heating core and bake it a bit longer.

Is there any particular reason that you HAVE to use applesauce instead of oil? Are you useing a mix? Can you replace half the oil with applesauce and use oil for the rest? I only ask because oil helps bind the cake together and that may be why it is breaking on you. That being said, if you don't have to stack it, you may be able to get away with it by just putting the two halves together and icing as normal. I don't know if I would do this for a wedding cake, though, it's a bit of a scary prospect.

Anyway--hope this helps. If you can, nix the applesauce and use the oil.

I, too, would lower the oven temp to 325. I use the magic strips around the outside of my pans. These are the strips of heat safe fabric that you soak in water, squeeze out the excess and wrap around the pan, holding it with a pin. They are available at any store that sells baking goods. I had a cake last night bread when I was moving it to the cake board. It was pretty moist so I just pushed the pieces together, put some moistening syrup on it and did my crumb coat. Came out just fine. Hope this helps!
