How Early Is Too Early

I have two cakes to make for one order. One is a 1/4 sheet cake for a daycare, and the other is a doll cake for the child at home. They are due Friday what is the earliest I could do these cakes and have them still seem fresh? Thanks in advance... Also anyone have a good idea for transporting a doll cake(BOX)

If you don't mind freezing the cakes (I do it all the time), you can bake them now and just take them out of the freezer on Thursday (or whenever you're going to ice/decorate them). Just make sure you wrap them well in saran wrap and/or foil (I only use foil) after they cool off but before you put them in the freezer. I always freeze my cakes a few days in advance, and they taste like they were just baked.

For transporting the doll cake ... maybe some sort of a rubbermaid plastic container? Or maybe a moving box (can buy them at office supply stores)?
