Help Please, Looking For Strawberry Mousse Filling Recipe

I have a bride & groom who want strawberry mousse filling for their wedding cake, but all of the recipes I have require refridgeration. Any ideas? I would really appreciate it. Thanks

I'm not sure you will be able to find one that doesn't require refrigeration.

Here's one from the recent "interesting website" thread, it only says refrigerate until set, I'm not sure about after that...

Strawberry Mousse Filling
Ingredients
1 pint strawberries, hulled
1 package of strawberry gelatin
1 pint whipping cream

Directions
Puree strawberries in blender. Place strawberries into measuring cup and add enough water to make 1 1/2 cups. Place in small saucepan and bring to a boil. Add gelatin. Turn into small bowl until almost set. Whip whipping cream and fold into strawberry mixture. Refrigerate until set.

Maybe someone else will have a better idea. Janice

if you replace the whipping cream with bettercream you should be able to buy yourself more time out of the fridge

That is the mousse I just posted/made, but it has to be refrigerated. It is delicious though. My cake will be sitting out as it is displayed and served this evening, so I'll let you know how the mousse holds up.

When I make my strawberry mousse I use pastry pride (non dairy ready to whip icing) then add the strawberry filling. It's quick and easy. It tastes very good and holds very well. I hope I'm not too late in response.

I want to try making the Strawberry Mousse Filling (recipe in above postings) today, but I'm not sure what strawberry gelatin is. Also, how much is 1 pkg of strawberry gelatin.
