Freezing A Cake

1/2 Sheet, Buttercream, Marble Cake

I had a customer just call. She picked up the cake just about an hour ago. Her son has 102 fever. She has to cancel the party. She wants to know if she can freeze it. I haven't ever attempted to freeze a fully decorated cake. Anyone have any ideas or suggestions. Is it possible? How to prepare it? How long can it be frozen? How do you defrost it?

How long can a fully decorated cake keep in the refrig?

I feel so sorry for her. It is amazing the timing of kids.

I've kept a fully decorated cake in the fridge for 3 days. I used the crusting BC icing though. I let it crust over then lightly draped it with Saran Wrap to keep as much moisture in as possible w/o it drying out. I don't even know if anyone could tell the diffrence. I just let it "defrost" at room temp with the wrap still over it.

I had the top tier of my wedding cake frozen for a year.........and my husband forced me to take a bite......."he thought it was bad luck if you didn't" and let me tell youl..........to this date, I have never tasted a better cake, it was soooooooo good!!!!!!! The decorations were perfect too.......all we did was wrap the entire cake box (with the cake inside of course) in plastic wrap.....tons of it and then in aluminum foil and threw it in the freezer for the entire year!!!!!!!! It wasn't freezer burned or anything I was so shocked, We left it at room temperature to defrost........it was a buttercream frosted cake

I just recently did a cake.. I iced it frozen, and then set it in the fridge.. When the cake unthawed it did nothing to the icing.. Even had fondant plaque.. I think that putting it in the fridge would be just fine!!! I always have left over cakes in the fridge.. for days, still good.. Just keep it wrapped.. Maybe she can keep it in the box and wrap a trash bag over it and keep in fridge.. Just keeping a baking soda box in there and pay attention not to let any foods be left unopened in there.. So that " food smell" wont ruin it..
