Cake Filling Question

Hi everyone:
I have a few silly questions to ask you but and here they are:

- what kind of filling do you use for a chocolate cakes?
- Can I freeze a cake once I have filled the cake and frosted it?
- Do I decorate my cakes after they thawed?
- Would keeping the cakes in the freezer for two weeks would be too long?

I was thinking that maybe the filling of the cake would get dry and hard? I will be using Buttercream frosting for my cakes. Help please ! icon_sad.gif

I like to do several different kinds of fillings for chocolate cakes.

ATM my favorite seems to be vanilla custard.

I'm not sure about how well custard would freeze, since it has cornstarch, and freezing tends to make things with cornstarch spongy. But if you frost the cake, I don't think the filling would dry out, as the frosting would serve as a kind of insulator.

For my chocolate cakes, I like a chocolate or raspberry mousse.

I've never tried freezing after I've filled, so I don't know.

Cutting cakes is easier when they've come out of the freezer and had little time to thaw. I like to ice and decorate after they've had a little time to thaw.

Grand Marnier buttercream

Kahlua Chocolate ganache

Baileys Irish cream Chocolate Ganache
Bailey's Irish cream Buttercream

Plain ol' chocolate buttercream
Plain ol' chocolate ganache.

Cookies and Cream filling.


Sorry I can't help you with the freezing question. I don't freeze my cakes after filling them.
