A month or so ago, I posted an idea of how to aquire the use of a commercial kitchen when all hope seemed to be gone.
I said to keep your eye on a local restaurant that was maybe not doing too well and perhaps you could rent their kitchen or even form a partenership.

I had a restaurant in mind near me when I posted that.
They are second year in business and seasonal at this point.
Recently, they had an ad in the paper for a head cook.
I have some experience in restaurant cooking so I went and talked to the owner.

She was impressed with my culinary background and offerd me the job.
She is also very responsive to custom cakes and has given me a free hand to do as I wish.

My first commercial product will be for Mothers day.
I am leaning toward a quilted/lace type square maybe with a gum paste rose on top.

The point is, where there's a will there's a way.
Keep your eye on them restaurants!
