I have been reading all I can to learn. I have made 1 cake and used the Wilton BCF. It is so sweet. Which recipe would be good to try?

Italian Meringue Buttercream is not too sweet, it uses all butter and a sugar syrup. It's delicious!

definitely add a little almond, a little salt, and i think recipes that call for flour really help cut the sweetness, unfortunately, i don't have a recipe per say, i just add stuff. usually about 1/2 tea vanilla, 1/2 tea almond, a little butter flavoring and maybe a couple tbl flour and i dissolve maybe 1/8 tea salt in my water before adding it. cream your shortening really well, adds to the fluffiness of the icing

One of the crusting buttercreams in the recipe area uses 1/2 cup flour. It's the one I use when I want a crusting frosting. It's definitely less sweet. I'm going to try upping the flour even a little bit more. The one I'm talking about has in parenthesis after it (faux fondant).
