White Chocoalte Curls Help!

Hi Eveyrone! I need some help!!

I am doing a wedding cake for tomorrow. They want a white cake, white icing, decorated with white chocolate curls. I ended up calling a chocolatier in the area who was willing to make the curls for me, since this was a last minute cake order. They are somewhat delicate, and I need to know when I should add them to the cake. I was going to frost it tonight, add the curls, and then take it to the place tomorrow at around noon. What do you think would be the best time to put it all together?

Personally, I would put the curls on at the reception. You don't want to take the chance of them falling off in transit. Do you have a lot to put on? Do they just lay on the cake?

I'm doing a cake soon that has sugar covered cherries around every border and as a topper. I'm waiting until I get there to put those on.

The chocolatier should have them packaged so there would be minimal damage. I would wait.

You can just ice it then put it on. They are delicate but just refrigerate it. I'm sorry to hear you had to pay someone to do that for you. Next time just get a block of chocolate and use a vegetable peeler or a melon baller to do your curls. It'll hold up just fine in the fridge and it really shouldn't melt unless it's sitting in the sun.

Ellen - It may depend on the type of icing your using. If you're using one that crusts, you would have to put them on after you ice it...while the icing is still 'wet' enough for the chocolate curls to adhere to. But I think you use IMBC or SMBC mostly, right? I would think since it doesn't crust really that you'd be able to wait and put the curls on at the reception site. That would be my choice. I, too, would be concerned about transporting the cakes with the curls already on them if they're fragile. But I could be completely wrong, as I've never actually done this! lol icon_rolleyes.gificon_razz.gif They may be completely fine if you ice the cake, apply the curls and then refrigerate until delivery/set-up. The cake being in the fridge overnight and then some may be enough to let the curls get good and 'adhered' to the frosting. Let us know what you decide to do and how it works out! icon_smile.gif

thaks for all of this advice!! I am using a crusting buttercream, so I don't think it will work to apply them later. I will apply them, and then put them into my freezing cold room (The one with no heat) until tomorrow, and hopefully they will set well.

Cake lady, thanks for the advice!! I just didn't think I was gonig to have time to do all of that since I teach full time, but it ended up that I am off of school for two days, so now I would have had the time! Oh well!

Thanks!! I will!! The bride wants hidden pillars with green hydrangeas in between. It's going to be so pretty with the chocolate curls!!
We'll see how it comes out!!
