Hi. I'm a newbie here, and although I haven't yet posted any questions or answers here, I have been lurking on the sidelines for about the last month just reading the different Topics. One question I've come up with and haven't seen any answer to:
Exactly what effect does gelatin have in a MMF or regular Fondant recipe?
I am almost finished with my 3rd Wilton Decorating level class, having taken the first 2 levels, and plan to go on to Fondant. I want to do a 2-tier cake for my final project for the 3rd class and want to do it in MMF (having used Wilton Fondant on my last cake and not liking it) for the taste. I haven't made any MMF as yet so don't know wheather or not to use gelatin in it, although I'm sure it won't hurt. Thanks.
Thanks to all three of you, but Lemoncurd, if gelatin is already incorporated in marshmallows, then why do some recipes call for it again; is more better?
Regular recipes for fondant do not have marshmallows. The recipe calls for sugar and gelatin with some other things.
MMF is only marshmallow (which contain the gelatin) and sugar, with a bit of water.

She's right. Unless of course you've found a recipe for gelatin and marshmallows, that would be news to me.
A standard fondant recipe will not have marshmallows. I prefer a traditional fondant recipe over the marsmallow one, but it's not that big of a difference in taste and application.

You'll see that it's only marshmellow, water and powdered sugar.
Okay, I went to the supermarket earlier, returned home, just finished making a batch of the marshmallow fondant and put it away to rest till later. It's so easy!! No more Wilton fondant for me. Thanks, All.
