I've done both and this is my experience. Left out, but covered, is the best way. Use a filling that does not need refrigeration. When put in the refrigerator, even covered, it sweats and gets sticky. When I painted on the fondant, it never dried in the refrigerator.

Just my experiences, hope it helps.

I've found the same way to be the best. Cover your cake and leave it out. The fondant will not get hard as long as you put a thick enough base of icing underneath. Good luck with the event! Be sure to post pics of your cake!
