if a recipe calls for active dry yeast ....but I bought "rapid rise yeast" .......does it matter?
I wanted to attempt homemade cinnamon rolls......by the way does anyone have a good recipe for these??
I dont think it matters. I was only able to get Rapid Rise yesterday for a King Cake and it worked fine!
Sorry, I just logged on... no, it doesn't matter. It just won't take as long to rise! I'm not sure how much the rising time will be cut by, just keep an eye and go by when it's doubled rather than going by time.

Yes, you can substitute rapid rise for active dry yeast--[1pkg.=1/4 oz.=2-1/4 teaspoons]. The only difference MAY be a faster rising time(s). I've really never paid much attention to the stated times in recipes, just watched the dough & did the 2-fingers-poked-in-the-dough test because it usually takes longer for me anyway!
I believe any roll dough recipe can be used for cinnamon rolls. When you're ready to "shape" the rolls, roll out the dough & spread with butter, cinnamon & sugar & raisins (opt.). Roll the dough up & slice it. Put rolls sideways on the pan & cover & let rise until doubled. Bake (check before stated recipe time though 'cause you don't want them overbaked). Ice, if you want with powdered sugar & milk glaze.
