Hi all, I am finally in a class the first class was this past monday. The lady teaching it is sweet. She is a much older lady, she told us she was 75, (holy cow i hope to be that able at that age). She iced a cake for us and used the hot knife trick, but instead of wiping off the water she left it on and dipped over and over smoothing out the icing. It seemed kinda wet to me, (but i've only been doing this for about a year) but from what I've read on this board, people say to wipe the knife off. She kind of smoothed the water off and then decorated it, she said the water can make it hard for the decorations to stick. Was wondering if any one on here does that? We seem to have two chatter boxes and it seemed very disrespectful to me for them to chat and then say oh I didn't hear that, can you tell it again. The teacher was a little upset with them, you could tell. There are only 5 of us in the class which I think is great. But anyway I'm finally in a class and am excited. Thanks for listening.

Hi Deijha,
I'm taking the Course III Wilton class right now and I'm thinking back to my Course I... My teacher definitely wiped the knife off after smoothing the icing. Sounds a bit drippy to leave the water on! I was really really lucky in my Wilton Course I...I was the only student!!! In Course II there were three of us. Now in Course III there are two. It's been really great to have such close attention from a great teacher.

I'm starting my first class I on Monday at Michaels. Can't wait! When I signed up my name was the only one on the sheet. That was 3 days ago. I will watch and see what my teacher does. I'm in Alabama. Pam

Hi all, I signed up at the local adult ed program 3 times and they cancelled all of them becuae not enough people signed up. So I was glad to find this class at the store, she said she wouldn't cancel no matter how many or few. DeniseRoy can I ask where in Ohio are you. I have seen some others on here from Ohio also. I'm pretty musch in the outback I live about an hour and a half from any major city. We have several decorators here in town but I think they mostly do wedding cakes. I really don't want to do wedding cakes.
Thanks for all the responses. I can't wait til our next class.

The town Im moving to has like one lady that decorates cakes LOL so I'm sure there's not a lot of people interested in those classes

I'm in the Decatur Area. We have a nice Michaels store. I'm sure I won't be the only one attending our class. Starts this Monday and I can't wait.
