I have a few cakes to make/decorate this week. How far in advance can I make coc/pecan filling and how do I store it?

The longest I have stored mine is 2 days in the refrigerator. You may be able to store longer, I haven't so I'm not sure past 2 days.

I don't see why it can't be stored for a week as long as it's refrigerated.

based on my restaurant experience with the stuff, if you keep it the fridge, you probably have several days...if it will be eaten right away. just make sure that your customers know to keep any leftovers in the fridge. they usually only last a few days before thay are sold out, but the few times we have had to pitch them, it's been very warm days.

Hi, I store my cake in the refrigerator if the filling contains any milk products cause leaving cake out in room temperature is not a good idea. But you can make the cakes in advance and wrap them with plastic wrap and foil and put cakes in freezer until you are ready to ice them and fill them. I leave my cakes out the thaw 1 day outside on counter top or 2 days in refrigerator to thaw out. I hope this is not too confusing for you, if so, I can explain a little better or perhaps someone else can share their input.
