My Buttercream Has No Taste!!

None at all, it's not too sweet, or too shortening-y, nothing. it's like eating air. thumbsdown.gif

I use the wilton class buttercream, well, because i'm still in class. But i'm tired of it!! That a lot of work for icing that tastes like nothing!

Anything i can do to make this icing taste better, or is there another recipe that is ok for use in class??

It has no taste with the vanilla flavoring? Have you tried other flavoring? Alot of the cake stores has alot of different ones. Give it a shot! icon_biggrin.gif

I like to use a 1 1/2 tsp. vanilla, 1 1/2 tsp. butter and 1/4 tsp. of almond flavorings in my Wilton Class buttercream. I also sometimes replace 1/2 cup of shortening with 1/2 cup of butter.

Are you using the Wilton buttercream WITH butter, or the stuff without it? If it's the stuff without it (all Crisco -- aka Decorator Icing), try using something stronger like Almond extract.

The buttercream I make has 1/4 t. almond, 1/4 t. butter flavoring, 1/4 t. lemon flavoring(mmmmmm!) and 1 1/4 t. vanilla....The lemon flavoring is what really makes this icing taste yummy! I would be glad to send you the whole recipe. I got it from my class instructor. It only has shortening, meringue powder, powdered sugar and flavorings..

It's not supriseing that it has no taste....

It's just powdered sugar, shorting (no butter) water and 1tsp of Vanilla flavoring. I choose vanilla in teh begining because i though the butter flavoring would give it too much of a buttery taste. guess not.

Tricia - i'd love the recipe! The lemon sounds yummy!

Don't know if the recipe already calls for it but a pinch of salt brings out the vanilla and other flavoring a bit more. Just a pinch though.

Here's the recipe I use:

1 cup unsalted butter
1 cup crisco
1/2 tsp salt
2 tsp. flavoring (I use 1 tsp. vanilla and 1/2 tsp each of cream bouqet and valencia
2 lbs. powdered sugar
3 TBS milk

Try the butter flavoring, it's great! That's the first thing people say is "Oh it smells sooooooooooo good".

I use a tablespoon of butter vanilla and a tablespoon of creme bouquet. It just sounds like you need a lot more flavoring. Hope that helps.

2lbs sugar? Is that a double recipe? OMG it seems like all i do is make icing!! I had to make 5 batches of bc icing for my sons cake, plus 1 batch color flow, and 1 batch RI. I HATED IT!! a double batch would be awesome!

Just be careful. If you are using a hand mixer you still need to make one batch at a time. Doubling your recipes will kill your mixer faster than not. I went thru 6 hand mixers in less that 6 months. My DH got me a KA for mothers day that same year.

i'm actually looking for one that's a little less sweet than bc dream. i love it love it, but my sister says it's too sweet and i would like to have other options.

Oh yeah. I always just assume everyone has a kitchen aid. icon_smile.gif My recipe is a double batch but if you only have a hand mixer you should halve it. Even then it still might kill the mixer.

I have a KA hand mixer and made 8 batches of 1/2 butter and 1/2 Crisco icing in one huge bowl. I kept it on low and it did just fine. I froze it in 3 cup containers. I was soooooooo tired of making icing. I have my 3rd Wilton 1 class tonight.

I thought maybe you were talking about Italian or Swiss buttercream - I think they taste like air - it almost melts in your mouth before you can taste it..... not a big fan. I like the buttercream dream recipe in the recipes section. It's awesome. icon_smile.gif

I have a sunbeam too, and I make double batches all the time. Just make sure you beat the crisco and/or butter real well with the liquid before adding the sugar.

No matter what I'm making (cake,cookies, icing, whatever), no matter what the recipe says for vanilla, I always double or triple it. Mainly because I LUV vanilla. But I'm one of those oh-I-measure-ingredients- SOME-of-the-time cooks!

I also use milk instead of water in mine.

Add a pinch of salt to cut the sweetness. It works every time! icon_lol.gif
