Hi Everyone, I am new here!! How do I get my MMF and BC to be really White??Any tips would be welcome! Thanks in advance..JoAnn

Hi JoAnn---

Welcome to CC!!

I do not work with MMF, so I can't help you there. As far as bc goes--if you use alll shortening, it should be very white.

I do not, so my bc has a cream color to it. I do offer my clients the choie of white-white icing (all shortening) or cream icing (made with mostly butter). Generally, they will sacrifice pure white for the delicious taste of the butter icing.

I have tried to use the Wilton Whitener, but I haven't had much luck with it really making that much of a difference.

Hi and Welcome! A while back someone posted that you can add just a tiny bit of violet color (I use Americolor) and it will balance out the yellow tint and it really works. You just have to add a tiny,tiny bit at a time. If you get too much she said you add yellow. She said they are opposite on the color wheel so they cancel each other out. I do this then add the wilton whitener. It's not the same white as all shortening but pretty good. And I'm with Lisa-I'll sacrifice the snow white for good flavor!

I never noticed that the mmf wasn't REALLY white.......mine is always WHITE as far as I can tell.

I made a test cake..First time working with MMF and I love it!! It started out white, but now it looks cream color..I am acually thinking that I might just leave it the cream color, The cake is for myself, ( for my son's Christening) so I don't really have to have it white white..Thanks for the replys!! JoAnn

Wilton sells stuff called white white or white icing color or something like that. You can get it in a squeeze bottle in the wilton isle at michaels. It works pretty well.

This may sound too obvious and may not be the problem at all, but be sure you're using the clear imitation vanilla extract. : ) Also, don't use the butter flavored Crisco... never used it myself, just heard that when going for true white, it will hinder your efforts. Good luck!

The first time I made the MMF I did use the "Butter" crisco.The fondant was alot more yellow.. The next time I used the reg one..I also used clear extract...
