How Can I Get The Air Bubbles Out Of My Cake Batter?

Thank goodness these are still practice cakes and the wedding is almost two months away, but my cakes are suddenly coming up with holes in them from air bubbles. I go through it with a knife and hit the pan on the floor in an attempt to get the bubbles out, but there are big holes (not really big, but they look huge to me icon_cry.gif ) when I level off the cake.

Can anyone give me some advice? Thanks!

Are you putting the pans in the oven immediately after mnixing the batter? Sometimes if you wait the baking powder starts acting and bubbling up which could cause the big bubbles. I do what you do and bang it a couple of times, also halfway through baking I bang it once on the rack in the oven.

Prior to putting the pans in the oven pick them up and let them fall on the counter this will force the bubbles out of your batter. Just pick up the pan a few inches and drop it. Works for me............NO BUBBLES!

I agree with SugarCreations, only I like to drop mine from about 12 inches just to make the family jump!

I haven't been dropping the pans, but I do bang them on the floor 6-7-8 times depending on how many bubbles I see come up. I will try the dropping thing and see if it works better.

izzybee, you bang it halfway through the baking time? icon_surprised.gif I guess it couldn't hurt at this point. I certainly don't want people cutting into my cake and having a big old hole.

I bang mine on the counter more than a couple of times. I usually lay out a dish towel and drop it on that (if it's during my DD's sleep time!). I usually do it repeatedly until I see quite a few bubbles come to the surface. It works well for me. You can't be shy about it either, you really need to use some force to get those air bubbles out. Also helps with frustration!

Thanks, Suz. I have quite a bit of stress these days, so banging my cake pan might help in more ways than one!
