There is a wedding for which I'm making a cake. If I freeze the cakes a couple days in advance, then pull the cakes out of the freezer the morning of the wedding around 8 am or so, assemble the cake frozen.... do you think it would be ready to serve by 4 or 5 pm?

the cakes will be a 12",10" and 8" about 4 inches high each. Has anyone ever done it this way?

Will the cake be seperated or stacked? If it is seperated I would think yes, it would be completely thawed in time. However, if it is a stacked cake, I would fear the layers all kind of "insulating" each other and I thoink it would stay frozen longer...not sure if it would be ready to serve or not.

the cake will be separated by dummies. the dummies will be covered in fondant but the cake will have a stacked effect. I think I've just decided to pull it out of the freezer the night before. Thanks for your help though.

I don't find that cakes take THAT long to thaw anyhow......I have always had them completely thaw out in an hour or so
