I just had to post (jumping up and down) that I have finished all the processes and had my inspection this morning. I am now legal and in business! I am so excited!!!
CONGRATULATIONS !!!! nothing better than being legal..at least you can sleep well at night w/ out the fear of getting fined or get caught doing illegal business... Good Luck...

It wasn't too bad...the inspector (who btw, was VERY nice!!) told me over the phone as well as all the paper work they sent me, what to do. She wanted to see all my cake stuff seperate from the family stuff in the kitchen. She specified that she wanted a Taylor Themoter in the fridge (I found one at Amazon for 8 bucks as well as William Sonoma has them for 18!!) and the fridge at 45 degrees. No pets at all are allowed. Not even a bird or hampster. So I put up some shelving in my breakfast room that is off the kitchen, and bought plastic bins and labeled EVERYTHING. I put all my tips in tackle boxes and had gloves and just organized all my stuff. I put my flour and sugar and such in their own bins and put them on the shelves and labeled and dated them. I then cleaned cleaned cleaned. I spent an entire week taking apart my kitchen and fridge and oven and cleaned. I am glad I did, because she pulled out a FLASHLIGHT!
The inspection went great though..she was so nice, she just talked about all kinds of stuff while she walked around the kitchen and opened cabinets and looked inside. She even pointed the flashlight up the kitchenaid (Make sure you clean it really well!) My DH thinks she was just looking for bugs and mold because she didn't spend a long time on each item, just looked around. She opened a couple of my bins to look inside and was curious about my icing tips. so we talked cake decorating, how long I have been doing it, etc. She ran the water for a while and checked the temp and also checked out the powder room off the kitchen. (YOu have to have a bathroom close by...with a roll of paper towels in there for drying your hands) She loved how I had everything organized!
I really recommend persuing this if you are in NC. It isn't that bad, just a lot of leg work and such (Had to go downtown Raleigh to get my tax ID and I also registered my business name with Wake County) My accountant also suggested opening up my own bank account (had to have the paper work from Wake County for the bank to show my business name was "legal") and to shop seperatly for all my items and to keep a profit report in Quicken and such. It really isn't that bad, just took a lot of work at the beginning, but now I am organized and together, I am looking forward to the experience! I never considered myself a business person...so that part will be interesting! hahaha!
