I've heard great things about creme bouquet but haven't used it yet. I just bought some today and am dying to try it....
Do you use it in icing? And how much? The lady said it was very concentrated so I don't want to go overboard.
Any suggestions? Will it give a citrus-y flavor?
thanks!

I love the stuff. I use it in cakes, cookies, icing, etc. It does have a light citrus flavor. Example: sugar cookies calls for vanilla. I put half van. half creme bouqet. I'll do the same for icing too. Try it, you will love it.

Creme Bouquet is my favorite flavoring to use because everyone loves it soooooooo much, including myself. It does have citrus undertones with almond and vanilla too. Hard to describe really. It is just wonderful and I can't recommend it enough! Just try it and you will see.

I use 1 1/2 teaspoons per 3 cup batch of buttercream frosting. I use 1 tablespoon to a cake mix with the cake extender recipe that is listed here on CC. If you just use a mix and not the extender too then I would only add 2 teaspoons.

Let us know what you think of it. icon_smile.gif

It is a very powerful flavoring so go light! It can be very overwhelming and actually make the cake inedible (IMExperience)!

It's nice in small doses.

I like to use it, but I agree that you should try adding just a tiny amount (a couple of drops maybe) to start with, then if you want a stronger flavor, add more. I use vanilla extract, almond extract, and creme bouquet all together to make a really delicious icing. It's mostly vanilla, a little less almond, and just a touch of creme bouquet. It's absolutely delicious, though. thumbs_up.gif

I will say that there is a difference in brands. I heard so many wonderful things about it then ordered from Sugarcraft. They have the CK brand. The smell was not what I was expecting...very lemony...wasn't very appealing. I saw many posts saying it was nasty, so I went to another site and ordered it (doitwithicing.com) I think the brand is magic line, but it is not on the label...the smell was heavenly. I have since used that one 1 1/4 tsp of that and same amount of vanilla with 1 tsp of butter (I use all shortening icings...a modified faux fondant II)...it is so yummy and smells great. So much more like a bakery. Since adding it I have had so many great comments, and it smells wonderful.

I think many of the people who dislike it have used the CK brand which is nothing like the other. Sugarcraft also has a creme royal which I realized is an attempt to taste like the magic line creme bouquet, but does not.

The point of my rambling is to say that if you are using creme bouquet for the first time and use the CK brand, you may be disapointed, although some do like it, you may just have to be more careful with portions with that brand.

happy baking

I have only used Creme Bouquet in Buttercream Icing. It makes it taste like it comes from a professional bakery. Creme Bouquet is considered a bitter. If you touch it with your fingers and taste it you will see how bitter it is. It smells very sweet so it is surprising when you taste it and it does not taste like the smell. I used it so often that I got sick of the sweet smell and had to quit using it. I now use butter extract instead and vanilla extract for my buttercream icing.

I think it tastes like Creme Soda. I've heard some people refer to it as the "wedding cake smell". I personally am not fond of it, but only because vanilla is my favorite and preferred flavor.

ctorno- Do It With Icing is where I get all my supplies from including yes, the Creme Boquet. In fact I am in San Diego right now getting ready for the cake show this coming up weekend and I'm sure I will drop by the store at least once while I am down here for the annual event. My sister and I buy all of our supplies there. The owner, Linda, loves it when I come down because I don't walk out of there with just one thing. icon_razz.gificon_razz.gif If she doesn't have what you need, she will do her best to find it for you!!!! Linda is such a wonderful lady. She's also preparing for the show. I think she is doing a demo this year but regardless, she always donates the best basket for the raffle. I've won it two years in a row. I'm so lucky. If there is something you need and it is not on her site, definately give her a call and tell her that Amy sent you.

What a small world!!!!! Oh oh oh, if you need clear vanilla, she has the best. It is such a clean smelling vanilla, not over powering like some I have used. It is soooooooooooooooooooooooooo good!! I highly recommend it. Of course you need to buy all your dusts here from CC!!! You can't beat that price!!!!!!!!! We can't forget our Cake Central Store!!!!!

Of the three I like Creme Bouquet the best. icon_biggrin.gif I did notice that the Creme Royal and the Butavan are Sugarcraft brand and the Creme Bouquet is CK Products brand. How did you get Butavan???? icon_eek.gif
They quit making Butavan last year and it has not been available for a while now. I can't even find it in someone's backstock and have been trying since December!
Oh please tell me they are making it again and that is why you were able to order it!!!! Sugarcraft is who I have ordered Butavan from for several years so obviously they are the ones that told me about the butavan no longer being available.

Look on the front page of sugarcraft's website -- a little blurb saying "IT'S BACK..."!!! icon_biggrin.gif Actually I've never tried it before so I had to order some. Check out the front page of their website.

I use Creme Bouquet and really like it (just put it in some BC I made last night) but I have the CK brand. Sounds like there might be some other/better options for Creme Bouquet out there. What brand does everyone else use?

Well, for lack of a better term, it's like a super-sonic Vanilla flavoring (different than extracts), it's called an emulusion. Very thick stuff. It's used in place of (or sometimes in addition to) Vanilla in cake batters mostly.

Oh my Lordie I am ordering a gallon of it right now in case they quit making it again!!!!!!!!!!!!!! Oh you can not believe how happy I am to see they have brought Butavan back!! I guess all the phone calls to Rustco did some good. I called them several times voicing my opinion about the not making it any more and I am sure others did the same.

icon_eek.gificon_eek.gificon_eek.gif Sugarcraft wants $23.26 for GROUND shipping!! Good grief! Now I am going to be calling them and asking what the reason for charging such high shipping is all about. Well, they are not the only ones selling it so I'll go find it elsewhere at that rate.

I am just THRILLED to have the stuff back and can't wait to smell and taste it again...................been having baaaaaaaaad withdrawels since they quit making it last year. icon_rolleyes.gif

Don't be too hard on Sugarcraft because of their shipping -- they are passing on the shipping rates that the contract they have with UPS dictates. I know of one other website who got screwed by the USPS and had to lower the prices of their goods to accomodate!!

I just checked Country Kitchens (http://www.countrykitchensa.com/shops/cake_decorating.aspx) for Creme Bouquet. They have 4oz, 8oz, and a gallon. Shipping for the gallon size was under $10 for me. I didn't think that was too terrible.

That is much more reasonable than 23.26 for a gallon. I'll go check to see if they have the Butavan! Thanks! icon_smile.gif

Over the weekend I bought some Magic Line Creme Bouquet and it smells SO MUCH BETTER than CK! I went home and threw out my CK bottle of Creme Bouquet, without even trying the Magic Line because in comparison, it smells to bad it almost seems spoiled or something. Can't wait to try the Magic Line version....it smells SO yummy.

I absolutely love this stuff! A local shop sells it. They began selling Lorann Oils Creme Boquet then they switched to CK.

Lorann Oils is my preferred brand.
CK is too lemony for me so I just use less and add some almond flavoring.

For Lorann Oils Brand:
For a batch of icing using 4 lbs. of powdered sugar I use 1 T. clear vanilla & 1 T. Creme Boquet.

For CK Brand:
For a batch of icing using 4 lbs. of powdered sugar I use 1 T. clear vanilla, 1/2 T. Creme Boquet & 1/2 T. Almond flavoring.
